Vegan banana bread.
A rich, moist and delicious banana bread recipe.
This recipe is one of my favourites. This banana bread is so easy to make and you can do it all in one bowl - so spend less time cleaning up at the end! This recipe is simple and so delicious, but can also be improved with any additions you want. You can add dark chocolate chips, pecans or even nut butter. Use this banana bread as a blank canvas for whatever mix-ins your heart desires!
Serves 6-8 people
Ready in 1 hour (preparation time 15 minutes, cooking time 45 minutes).
Ingredients
4 medium ripe bananas
¼ cup coconut oil
¼ cup nondairy milk (I used oat milk in this recipe)
¼ cup light brown sugar (if sugar free, you can leave this out and the bread will have the sweetness from the bananas)
1 tsp vanilla extract
2 cup white flour
1 tsp cinnamon
1 tsp baking soda
½ tsp salt
5 chopped dates (optional)
sliced bananas, for topping
Method
Preheat the oven to 180C.
In a large mixing bowl, roughly mash the bananas. Add the brown sugar, melted coconut oil, vanilla extract, and milk, and whisk to incorporate.
Sift in the flour, baking soda, salt, cinnamon and chopped dates, and use a wooden spoon to mix.
Transfer the batter to your prepared pan. Make sure you have greased the baking pan with oil/butter. Top with the extra banana slices.
Bake for about 40 minutes, then cover with foil and bake for 5 minutes longer, until a toothpick inserted in the centre comes out with just a couple crumbs.
