Easy, creamy cashew butter.

Ideal spread for toast, or to add to oats!

This thick, creamy and delicious home-made cashew butter is a great alternative to peanuts. It feels indulgent yet is packed with healthy fats, protein, magnesium and iron! This cashew butter is a perfect mid afternoon snack along with fruit. It can also be added to your morning bowl of oats or used as a spread for toast. 

Yield: 1.5 cups.

Ingredients

  • 2 cups (240g) Roasted Cashews 

  • 1 tbsp Coconut oil (Melted) 1/2 tsp

  • Sea Salt 

Method  Add cashews to a high speed blender, and blend on low for 10 minutes. It will start off looking crumbly and will start to stick to the sides. Make sure to scrape down the sides as necessary. After blending for 5 minutes add the melted coconut oil. Keep processing until the butter reaches a smooth consistency. Add the sea salt towards the end. Then transfer the nut butter to an airtight jar and you can keep it in the refrigerator. Only roasted cashews will work - do not use raw cashews. I recommend using a high powered Vitamix or Ninja blender.
