Butterbean & roasted cauliflower bowl.

Delicious, healthy lunch-time buddha bowl.

This is an easy lunch recipe, which contains a variety of veggies and a great balance of macronutrients; your carbs, protein and fats, keeping you fuller for longer. This meal will keep you satiated, energised and ready to tackle the rest of your day.

Serves 2

Ready in 30 minutes

Ingredients

  • 1 small head of cauliflower

  • 1 avocado

  • 1 block of tofu

  • 1 pack spinach

  • 1 tsp pumpkin/sunflower seeds

  • 2 tsp olive oil

  • 1 tsp coconut oil

  • pinch chilli flakes (optional)

  • pinch sea salt

  • pinch pepper

  • 1 tbsp hummus

  • 1 tsp soy sauce/tamari

Method

Break the cauliflower and arrange on a baking tray. Drizzle olive oil, salt, and chilli flakes (optional), and roast in the oven for 10-15 minutes. Next, dry and press tofu. It is ideal to do this the day before to remove the water. Cut into chunks. Add coconut oil to a pan, and add the chunks of tofu. Fry for 5 minutes and when crispy add the soy sauce. Cook for a further few minutes. For the butterbeans, toss in a bowl with olive oil and sea salt.

When assembling the bowl, add the spinach first. Add the beans, roasted cauliflower, tofu, 1/2 avocado, seeds, and the dollop of hummus. Enjoy!
